How is this different from a dedicated order-management tool?+

An order tool still has to sync with your stock, your billing and your accounts. Here they are the same system, so there is nothing to sync — and you switch on Inventory, Invoicing or Accounting only when you need them.

Can I run Sales on its own?+

Yes. Start with quoting and orders alone; add the apps around it when you want deliveries, invoices or a pipeline feeding in. Nothing to re-install, nothing to migrate.
